LIFESTYLE NEWS - Try this delicious Cape Malay chicken curry recipe.
Ingredients
- 4 Tbsp sunflower oil
- 2 medium onions, chopped
- 1 kg chicken, cut into portions
- 3 tsp turmeric
- 3 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp red chili flakes
- 2 tsp mild garam masala
- 3 tsp each crushed fresh garlic and grated fresh ginger
- 1 medium tomato, chopped
- 4 potatoes, peeled and cut into quarters
- 6 fresh curry leaves
- 6 sprigs of fresh coriander
- Salt and pepper to taste
Method
Heat oil in a pot. Add the onion and fry until transparent, add garlic and ginger and fry for a few minutes more.
Add chicken and brown on both sides. Now add the spices, tomato, salt and pepper. Stir well. Pour in a cup of water and cook for ten minutes.
Add the potatoes and another cup of water. Cover and simmer on a low heat until the potatoes are cooked.
Add the curry leaves and coriander just before serving and stir gently. Serve with rice, yellow rice or rotis.
