Harissa veg and couscous salad
Serves 4 – 5
You’ll need:
- McCain Roast Harissa Glaze – Mediterranean
- couscous steamed and set aside
- 1 packet mixed lettuce leaves
- 100g olives
- 1 punnet cherry tomatoes
- 1 red onion sliced
- 1/3 cup almonds chopped
- For the dressing
- 30ml olive oil
- juice of a small lemon
- 1 teaspoon Sumac
- 1 teaspoon Cayenne pepper
- salt and pepper to taste
How to:
- Cook the Roast veg according to package instructions and set aside.
- Combine all the dressing ingredients and mix well;
- In a large bowl, add the couscous, next add the mixed lettuce leaves, olives, cherry tomatoes and red onion.
- Drizzle some of the dressing onto the salad and add the almonds.
