Ingredients
- 800g long-grain rice
- 2l water
- 20ml salt
- 2 chicken breasts, diced
- 50ml sunflower oil
- 4 large onions, peeled and sliced
- 4 cloves garlic, chopped
- 5ml ground coriander
- 5ml ground ginger
- 10ml anchovy or shrimp paste
- 1 - 2 dried red chillies, crushed
- 50ml soy sauce
- 200g cooked shrimps or prawns
- 8 fried eggs or strips of omelette
Method
Boil the rice in the water with the salt, and then allow to cool. Stir-fry the diced chicken breasts in the oil, add the onions and continue cooking over high heat until the onions brown.
Lower the heat and add the garlic, coriander, ginger, anchovy or shrimp paste and chillies. Sauté for 1 minute to develop the flavour. Add the soy sauce, shrimps (or prawns) and cooked rice.
Warm through while stirring all the time to prevent the rice from burning. Top the dish with fried egg or strips of omelette.
